cornmeal waffles

Serve these with your favorite fried chicken and maple-butter syrup:


  • 1 cup buttermilk
  • 1 egg
  • 2 tbsp butter, melted and cooled
  • 1/2 tsp kosher salt
  • 1 tbsp sugar
  • 3/4 cup all-purpose flour
  • 3/4 cup yellow cornmeal
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
4 waffles


Whisk together the buttermilk, egg, butter, salt, and sugar. Fold in the flour, cornmeal, baking soda, and baking powder. Stir just to combine, taking care not to overwork the batter.

Ladle the batter onto the waffle iron.

Serve warm with pecans and syrup.

    These are absolutely delicious but can become a tad dry if you refrigerate them and then toast them the next day.
