carrot ginger dressing

Ingredients

  • 4 carrots, peeled and chopped
  • 2" piece ginger, peeled and chopped
  • 1 clove garlic
  • 2 tbsp white miso
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp kosher salt
  • 1/2 lemon, juiced
  • 1/2 cup water
  • 2 tbsp mayonnaise

Directions

Purée the carrots, ginger, garlic, miso, rice vinegar, soy sauce, sesame oil, salt, lemon juice, and water in a blender on high speed until everything is finely chopped. Add the mayonnaise and blend on low speed until smooth and creamy.
