I used my basic cooking technique and found flavor inspiration from the ever-inspiring J. Kenji Lopez-Alt at Serious Eats:

Ingredients

  • 2 salmon fillets
  • 2 tbsp white miso
  • 1 tbsp dry sake
  • 1 tbsp soy sauce
  • 1/2 tbsp sugar
  • 1/2 tsp kosher salt
  • pepper

Directions

Preheat oven to 450ยบ.

Place salmon skin-side down (if it has skin) on a foil-lined baking sheet.

Whisk together the miso, sake, soy sauce, sugar, and salt. Slather the sauce on the salmon, sprinkle with pepper, and let sit while the oven is heating up.

Bake on the medium rack for 25-30 minutes until the top has a nice deep color.

Serve.

    Made this a week ago, didn't have the sake so I used Vermouth instead ( my normal dry white wine )..
    It was great! Will try again with the sake and a wasabi aioli..
