What happens when life gives you leftover hamburger buns? You make sloppy joes!

I looked at a lot of recipes and was particularly intrigued with Simply Recipes' and the Pioneer Woman's takes, but in the end I based my recipe on my bolognese ragu since the ingredients are so similar and the cooking method seemed right: low heat for a relatively long time. The result was tasty-tasty.

Ingredients

  • 4 tbsp butter
  • 1 onion, finely diced
  • 1 stalk celery, finely diced
  • 1 carrot, peeled and finely diced
  • 1 bell pepper, finely diced
  • 1 clove garlic, minced
  • 1 10 oz can diced tomatoes amd green chilies
  • 1 lb ground beef or turkey
  • 1 tbsp chili powder
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1/2 cup ketchup
  • hamburger buns

Directions

Heat butter in a large saute pan over medium heat. Add the onions, celery, carrots, bell pepper, and garlic. Cook for 15 minutes, stirring occasionally. (The point is to soften the vegetables, not to brown them.) Add the can of diced tomatoes and green chilies, and cook another 15 minutes.

Add the meat, chili powder, salt, and pepper. After the meat has lost its pink (about 5 minutes), add the ketchup. Let simmer for 15 minutes, stirring occasionally.

Toast your buns and serve.
