insanely great waffles

The title sounds so promising--and the recipe delivers--but the real reason I call it "insanely great" is to pay homage to the original recipe, Waffle of Insane Greatness, which has been making its way around the internet.

Frankly, this recipe is almost exactly like my own buttermilk waffle recipe except that the flour is cut with corn starch and there's oil instead of butter.

I've slightly modified the recipe to match the way I like to do things but check out the original if you want the real deal.

Ingredients

  • 1 cup whole milk or buttermilk
  • 1 egg
  • 1/4 cup vegetable oil
  • 1/2 tsp kosher salt
  • 1 tsp sugar
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 cup corn starch
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
4 waffles

Directions

Whisk together the milk, egg, oil, salt, sugar, and vanilla. Sift in the flour, corn starch, baking powder, and baking soda. Stir just to combine, taking care not to overwork the batter. Let sit for 30 minutes.

Ladle the batter onto the waffle iron.

Serve warm with syrup.
