I'm crazy. I kind of winged this on the fly. Kevin tasted it and called it "interesting." Maybe that's not confidence-building, but he ate it all so there.

I love hummus and knew there was only one thing that could make it even better: pork sausage!

Ingredients

  • 8 oz pasta (e.g. pappardelle)
  • 1 tbsp extra virgin olive oil
  • 1/4 lb italian sausage, sans casings
  • 1/4 lb portabello mushrooms, sliced
  • 16 oz hummus
  • handful micro greens
4 small servings

Directions

Bring a large pot of salted water to a boil and cook noodles until al dente according to the package.

Heat the olive oil in a large pan over medium heat. Add the sausage and mushrooms. Break up the sausage and cook until the sausage is nicely browned.

Lower the heat to low and add the hummus.

Add the noodles and some pasta water if the sauce seems too thick. Mix well.

Serve with a little micro greens on top.
