Here's how I celebrated St. Patrick's day: Guinness brownies! They're dense and super moist., kind of like fudge. And they don't have a beer flavor. I think the beer reduction just brings out the taste of the chocolate.

Ingredients

  • 11 or 12 oz bottle Guinness stout
  • 12 oz bittersweet chocolate, chopped
  • 1 cup butter
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 2 tsp kosher salt
  • powdered sugar

Directions

Preheat oven to 350°.

Bring stout to a boil over medium heat, and then simmer until it has reduced in half to about 3/4 cup (about 30 minutes). Let cool.

Microwave the chocolate and butter for 20 seconds bursts, stirring in-between, until melted.

Whisk sugar, eggs, and vanilla in a large bowl. Whisk in the chocolate mixture and then the beer. (There should be about 1/2 cup of beer.) Fold in the flour and salt.

Pour the batter into a greased 9x9" baking dish. Bake until the surface begins to set and a toothpick inserted into center comes out clean (about 40 minutes).

Cool before slicing into squares. Sprinkle with powdered sugar for flair.
