curried waldorf salad

I've never had a Waldorf salad, but this version with curry was irresistible. I had to make it, and it was fantastic. The celery keeps this salad light and crisp, balancing the sweetness of the apples.

Ingredients

  • 1 lemon, juiced
  • 2 tbsp mayonnaise
  • 1/2 cup plain yogurt
  • 1 tsp curry powder
  • 1/2 tsp ground cumin
  • 1/2 tsp kosher salt
  • 2 fuji apples
  • 3 cups celery, thinly sliced
  • 1/2 cup walnut pieces, toasted
  • 1/4 cup raisins
  • 1/4 cup parsley leaves, chopped
6-8 sides

Directions

In a large bowl, whisk together the lemon juice, mayonnaise, yogurt, curry powder, ground cumin, and salt.

Cut the apple into quarters, remove the core, and then slice each quarter lengthwise into thirds. Then cut thinnly across each slice.

Place apples, celery, walnut pieces, raisins, and parsley into the bowl and toss with the dressing.

Serve immediately or chill for a few hours.
