buttermilk waffles

Waffles are a special way to start the day, especially if you top them with maple-butter syrup adapted from wangissimo.

I use a little more buttermilk than Bittman, and my method limits the whole thing to one bowl.

Ingredients

  • 1 cup buttermilk
  • 1 egg
  • 4 tbsp butter, melted and cooled
  • 1/2 tsp kosher salt
  • 1 tbsp sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
4 waffles

Directions

Whisk together the buttermilk, egg, butter, salt, and sugar. Sift in the flour and baking soda. Stir just to combine, taking care not to overwork the batter.

Ladle the batter onto the waffle iron and cook to the doneness you want and deserve.

Serve warm with pecans and syrup.
