breakfast salad for two

breakfast salad for two by joanie

We're staying in a rental in Kauai. The kitchen pantry isn't stocked, the knives are dull, and everything seems a little off (e.g. the burners aren't level). I wanted to make something easy and delicious for breakfast, and here's what I came up with.


  • 2 handfuls of mixed salad greens
  • 2 radishes, sliced
  • 1/4 lemon, juiced
  • 2 pieces of bacon
  • 2 eggs
  • 1 green onion, sliced
  • salt and pepper to taste
2 servings


Toss salad greens and radishes with lemon juice. Arrange on a plate.

Cook bacon on medium heat until crispy. Crumble atop the salad.

Cook the eggs in the bacon pan until cooked on the bottom but still runny on top. Add to the salad.

Sprinkle with sliced green onions and a little salt and pepper.

Enjoy immediately.
