pomegranate mojito

This is just a mojito with the addition of fresh pomegranate juice. Truth is, I just seeded a pomegranate, and I had extra seeds. What does one do with about 1/4 cup of beautifully ripe pomegranate seeds on a Friday afternoon? Well, here was my answer. And I'm assuming it makes the mojito rich in antioxidants (or something good like that), which means that this isn't a cocktail. It's an elixir! Yes. It is.

Ingredients

  • 1 lime
  • 3 sprigs fresh mint (about 7 leaves)
  • 1 tsp powdered sugar
  • 1/4 cup fresh pomegranate seeds
  • 1 shot white rum
  • 1 cup soda water
1 glass

Directions

Juice the lime. Add mint sprigs, sugar, and pomegranate seeds. Muddle. Add rum and soda water. Pour into a shaker and give it one good shake. (More than that makes the soda water will get mad, and you don't want to see soda water mad...)

Pour over a glass of ice. Garnish with mint and serve with or without a straw.
