ginger syrup

I wanted to make ginger syrup for a cocktail I'm concocting using ginger ale, rum, and bitters. The drink needed a more concentrated ginger taste so I went about making a syrup. Turns out, a fantastic by-product of making ginger syrup is the sweet, mellowed ginger that's left behind. Yum! The ginger will make a great garnish to my cocktail, but it will also no doubt make its way into a ton of dishes (probably desserts) because it's just so darn tasty.

Ingredients

  • 4 oz peeled ginger
  • 1 cup water
  • 3/4 cup sugar

Directions

Slice the ginger as thin as possible using a mandoline. Place in a saucepan along with water and sugar. Heat on medium until the sugar dissolves and the liquid starts to boil. Reduce to low and let simmer for 30 minutes. Strain and cool before using.
