banana bran muffins

I'm always trying to eat more bananas. Problem is, I don't really like eating them, which means too often I'm left with soft, speckled bananas that are past their prime and really not fit to eat--but perfect for muffins! There's nothing better than getting a second chance at eating those bananas you bought.

Ingredients

  • Wet ingredients:
  • 1 large egg
  • 1/3 cup packed brown sugar
  • 1-2 overripe bananas, mashed
  • 1/2 cup unprocessed wheat bran
  • 1/2 cup buttermilk
  • 2 tbsp. canola oil
  • 1 tbsp. vanilla extract
  • Dry ingredients:
  • 1 cup whole wheat flour
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. cinnamon
  • 1 pinch salt
  • Optional:
  • blueberries (recommended!)
  • • walnuts
  • • raisins
  • • chocolate chips

Directions

Preheat oven to 450º.

Line muffin tray with baking cups.

Whisk egg and brown sugar until smooth.

Add banana, wheat bran, buttermilk, oil, and vanilla extract.

In a separate bowl, sift together flour, baking powder, baking soda, cinnamon, and salt.

Make a well in the center of the dry ingredients and pour in wet ingredients. Stir just until mixed.

Mix in any optional ingredients.

Fill muffin cups.

Bake 20 minutes.
