slow-cooked chipotle pork

This was pretty delicious, and I'm beginning to wonder if everything slow-cooked is delicious. I served this dish with Mexican rice and intend to use the leftovers in tamales. It also fulfilled my ongoing desire to cook with beer, which is weird because I don't like to drink beer.

Ingredients

  • 2 1/2 lbs pork shoulder cut into 1" slices
  • 1 yellow onion, chopped
  • 3 cloves garlic, chopped
  • 3 chipotle chiles in adobo sauce
  • 1 tsp adobo sauce
  • 1 tsp sugar
  • 1 tsp dried oregano (preferably Mexican)
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp kosher salt
  • 1 bottle dark beer (Modelo or Guinness)
  • 1 lime

Directions

In a slow cooker, combine pork shoulder, onion, and garlic. Remove the seeds from the chiles. Chop them and add to the slow cooker. Also add some of the adobo sauce. Add the sugar, spices, beer, and the juice of the lime. Stir it all together, mixing well. Cover and cook on high for 4 hours.

Garnish with cilantro or chopped avocado.
