caramel corn

In my second popcorn recipe, I insisted I wasn't a popcorn freak. And yet here I am posting a THIRD popcorn recipe. Maybe I'm a popcorn freak after all...

This is a great recipe. It's simple, and the flavors are spot on. It's better than Cracker Jacks, which I loved as a kid. (I long for those cool surprises!)

Ingredients

  • 2 tbsp vegetable oil or ghee
  • 3/4 cups popcorn
  • 1/2 cup roasted peanuts w/ skin (optional)
  • 1 stick butter
  • 1 1/2 cups brown sugar
  • 1/3 cup corn syrup
  • 1 tsp kosher salt
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda

Directions

Heat oil/ghee and 3 kernels in a heavy 5 quart pot with a cover over medium-high heat.

When a kernel pops, add the rest of the kernels. Cover. Shake to distribute and return to heat. No need to keep shaking. Just let it sit there. Remove from heat when the popping subsides (about 2-3 seconds between pops), and transfer to a large mixing bowl. Remove unpopped kernels. Add peanuts.

Heat butter, brown sugar, corn syrup, and salt over medium heat. Stir occasionally as it comes to a boil. Let it continue to boil for 5 minutes. Remove from heat. Add vanilla and baking soda. Stir well.

Working quickly as the caramel starts to set, pour over popcorn, stirring to incorporate evenly throughout. Transfer to a parchment-lined baking sheet to cool before serving.

    This looks fantastic. I'm always going through the Trader Joe's caramel corn and maybe I should start making my own!
