simple ceviche

I like ceviche made in a very simple fashion with fresh ingredients. It's all about the fish, and you gotta be able to taste it. You can easily fancy this ceviche up with, say, tabasco, cilantro, avocado, mango, etc. It's great in tacos or with chips. Today I plan on eating it with corn-avocado relish on a bed of romaine so I'm doing it simple.

Ingredients

  • 1/2 lb sushi grade tuna or other fish
  • 1/2 fresno or jalapeƱo pepper
  • 1/4 red onion
  • 1/2 tsp kosher salt
  • 1 lime
4 servings

Directions

Cut fish into 1/2" cubes. Remove the seeds from the pepper and mince. Mince the red onion. Toss all three with salt and the juice of the lime. Set aside for 1 hour.
