This is one of the easiest and tastiest ways to feed a lot of people.


  • 8-12 bone-on, skin-on chicken thighs
  • olive oil
  • marinade or BBQ sauce
  • salt to taste


Preheat oven to 400ยบ.

Rub the skin side of the chicken with olive oil and lay them skin-side down on a baking sheet, taking care to spread them out. Sprinkle with a little salt.

Bake on the middle rack for 30 minutes.

Slather the chicken with your favorite sauce. Turn them over skin-side up and slater the skin with sauce. Put the sheet back into the oven for another 10 minutes. Add more sauce and cook another 10 minutes. Finally, add one last pass of sauce and finish with another 10 minutes.

Let sit 10 minutes or so before serving.
