Yam Hash

This was delicious, especially topped with a runny egg.

Ingredients

  • 1 slice thick bacon, thinly sliced
  • 1 yam, peeled and grated
  • 2 green onions, sliced
  • salt
  • pepper

Directions

Cook the bacon in a large skillet over medium-high heat until crisp.

Reduce the heat to medium and add the grated yam. Stir to incorporate the bacon, and then spread it out on the skillet so that it cooks evenly. Stir and re-spread every couple of minutes until evenly and thoroughly cooked, about 10 minutes.

Add in the green onions and stir until incorporated.

Add salt and pepper as needed.

Plate and serve.
