Another way to do up those Thanksgiving leftovers! Good on a sandwich or salad.
- 2 cups leftover turkey
- 1/2 cup mayonnaise
- 2 tbsp chutney (e.g. Major Grey)
- 1 tbsp curry powder (e.g. Madras)
- 2 tbsp red onion, minced
- 1 stalk celery, diced
- 2 tbsp raisins
- 1/2 cup whole roasted & salted cashews
- salt and pepper to taste
Chop the turkey into cubes. Set aside.
In a large bowl, whisk together the mayonnaise, chutney, and curry powder. Add the turkey, onions, celery, raisins, and cashews. Mix well. Add salt and pepper to taste.
Refrigerate for an hour or so to let the flavors combine.
