Here's a quick meal for recycling that Thanksgiving turkey!
- 1 tbsp olive oil
- 1 onion, diced
- 1 tbsp chili powder
- 1 tsp kosher salt
- 28 oz can diced tomatoes
- 1/2 cup stock
- 2 cups cooked turkey, chopped
- 15 oz can kidney beans
- 15 oz can garbanzo beans
Heat the oil in a pot. Add the onions and cook until golden. Add the chili powder and kosher salt. Then stir in the diced tomatoes and stock.
Once it reaches a simmer, add the turkey and beans.
Bring back to a simmer and cook another 10 minutes.
Top with cheese and onions, or whatever you fancy on your chili.
