- 4 sweet potatoes
- 4 tbsp butter, melted
- 1/4 cup brown sugar or maple syrup
- 1/2 tsp kosher salt
- 1/4 tsp pepper
Preheat the oven to 400º.
Peel the sweet potatoes and chop them into 1" cubes. Add them to a pot of salted water. Bring to a boil, and cook just tender, about 15 minutes. Drain.
In a large bowl, combine the butter, brown sugar or maple syrup, salt, and pepper. Add the sweet potatoes and toss.
Transfer to a baking dish and bake for 25 minutes or until the tops brown.
