The fish is spicy. Spicy good.
- 2 tsp chili powder
- 1 tsp cayenne pepper
- 1 tsp paprika
- 1 tsp black pepper
- 2 tsp kosher salt
- 2 catfish fillets (about 1/2 lb each)
- 1 tbsp extra virgin olive oil
- 1 tsp butter
- 1 corn
- 3 handfuls of mixed baby greens
- 2 tbsp scallion buttermilk or ranch dressing
Position a rack about 6" from the top broiler. Get the broiler going at full heat.
Blend the spices and salt. Coat the catfish with oil and spice blend. Broil for 5 minutes or until deep brown and tasty-looking.
Meanwhile, heat butter in a skillet over medium-high heat. Add the corn and cook on all sides until golden brown. Remove from heat and cut off the kernels.
Plate the greens. Add the corn. Drizzle with dressing. Top with catfish.
