molasses cookies

Nothing says old-timey like molasses cookies!

Ingredients

  • 1 egg
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup molasses
  • 1/2 cup (1 stick) butter
  • 1/2 tsp kosher salt
  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground carnamom
  • sanding or raw sugar for dusting

Directions

Preheat oven to 375º.

Whisk together the egg, sugars, molasses, butter, and salt. Sift in the flour, baking soda, and spices. Mix just until combined.

Place sanding or raw sugar in a bowl for dusting. Scoop dough by the tablespoon, form a ball, and roll it in the sugar. Place on a parchment-lined baking sheet with some room to grow. Leave as balls for puffy cookies, or flatten them to achieve a disk shape.

Bake for 8 minutes.
