When I first saw a picture of smashed potatoes, I thought they were the most brilliant thing. And they are.
- 12 small new or gold potatoes
- 2 tbsp extra-virgin olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 tbsp butter, cut into 12 pieces
Preheat oven to 400º.
Put potatoes into a pot of salted water and bring to a boil. Reduce heat and simmer until you can insert a fork and easily remove it (about 15 minutes).
Drain the potatoes and toss with olive oil, salt, and pepper in a large bowl. Spread the potatoes out on a baking sheet. With a potato masher or sturdy spatula, gently press down on each until mashed. Drizzle any leftover oil in the bowl onto the smashed potatoes.
Bake for 15 minutes or until crispy and golden. Add a pat of butter to each. Then bake for another 5 minutes.
