dry fried green beans

Here's the basic technique, and they are good. You can add chili sauce or whatever you like.

Ingredients

  • 1 lb green beans
  • 2 tbsp canola oil
  • 1 shallot, sliced
  • 1 clove garlic, minced
  • 1 tsp kosher salt
4 servings

Directions

Bring a large pot of salted water to a boil.

Meanwhile, trim green beans and cut in half. Add to boiling water and cook 2 minutes. Drain and set aside.

Heat oil over medium-high in a wok or large skillet. Add the green beans, shallots, and garlic. Cook, stirring often, until the skin starts to pucker and the shallots turn golden brown (about 10 minutes).

Season with salt.

Serve immediately.

    This is a good recipe. The dry fried green beans not only tastes great, it's also nutritious. Some Chinese like to add dry shrimp to it too. If you want to add dry shrimp to the recipe, make sure that you soak the dry shrimp in hot water to make it soft and wash the dry shrimp under the faucet to get rid of sand or dust in the shrimp.
