bulgur with chicken and avocado

Ingredients

  • 1/4 cup extra-virgin olive oil
  • 1 orange, juiced
  • 1 tbsp sherry vinegar
  • 1 tsp kosher salt
  • 2 cups cooked bulgur
  • 1 cup roasted chicken, shredded
  • 1 avocado, sliced
  • 6 cherry tomatoes, halved
  • fresh cilantro

Directions

Combine olive oil, orange juice, vinegar, and salt. Toss with bulgur and chicken. Top with avocado and tomato. Garnish with cilantro.
