My mom squealed with excitement when she saw my sweet potato. And then we baked it.
- 1 sweet potato
- 2 tbsp extra-virgin olive oil
- 1 clove garlic, minced
- 1/2 tsp kosher salt
- 1/4 tsp pepper
- 1 tbsp fresh mint or parsley leaves, chopped
Preheat oven to 400º.
Slice sweet potato into 1/4" disks or 1/2" cubes. Toss with olive oil, garlic, salt, and pepper.
Spread on a baking sheet and bake for 40 minutes or until soft and delicious-looking.
Plate and top with fresh herbs.
