scalloped root vegetables with broccoli and gouda
a good comfort-food way to use up those potatoes and sweet potatoes you've got laying around.
- 1 medium sweet potato, sliced thinly
- 3 medium russet potatoes, sliced thinly
- 1/2 head cauliflower, sliced thinly
- 1 carrot, sliced thinly
- 2 cups broccoli florets, cut into smallish sizes
- 2-3 oz grated gouda
- 2 C milk
- 2 T flour
- 1 t cayenne
- salt and pepper to taste
toss everything from sweet potato to gouda in a large bowl. put the milk, flour and cayenne in a food processor or blender and mix together until it thickens just a bit. pour over vegetable mixture and toss. pour it all into a 9 x 11 pan and bake for 30-45 minutes. makes a fine meal if you prepare a good salad alongside.
