a yummy alternative to regular mashed potatoes. instead of leeks you can use cabbage, leeks, spinach, green onions, and so on.
- 1 or so pounds of potatoes, chopped into 2-inch squares
- 1 large or 2 small leeks, thinly sliced, white parts only
- 3/4 cups milk
- 1/4 t white pepper
- 14 t salt
Steam the potatoes in a vegetable steamer for 15-20 minutes, until soft.
Poach the leeks in the milk for 6 or so minutes.
Using a strainer, pour the milk over the potato pieces and mash. Stir in leeks, salt and pepper.
