quinoa/grilled bread mediterranean salad

quinoa/grilled bread mediterranean salad by alchemisty

a tasty alternative to couscous-based taboule.

Ingredients

  • 1/2 C quinoa
  • 2 slices hearty wheat bread
  • 1/4 C olive oil
  • 1 large ripe tomato, chopped
  • 2 small cucumbers, peeled and chopped
  • 1/2 bell pepper, chopped
  • 4 T chopped cilantro
  • 2 T chopped parsley
  • 2 T chopped mint
  • 1 T lemon juice
  • 1 T red wine vinegar
  • black pepper
4 servings

Directions

toast the bread well, until very crisp. set aside to cool.

place the quinoa in a saucepan with 1 C water. bring to a boil then simmer for 10-15 minutes, until cooked. set aside to cool or cool it in a sieve with cold water.

toss all the ingredients together in a large bowl.
