Shrimp, Avocado and Grapefruit Salad

Shrimp, Avocado and Grapefruit Salad by alchemisty

Ingredients

  • 2 T olive oil
  • 12 large shrimp
  • salt
  • freshly ground black pepper
  • 1/2 grapefruit, peeled and sectioned to remove the tough outer skins.
  • 2 radishes, thinly sliced
  • 1 T red wine vinegar
  • 2 C chopped romaine lettuce
  • 1 C chopped butter lettuce
  • 1 peeled avocado, cut into chunks

Directions

Sprinkle shrimp with salt and pepper. Cook in a grill pan or saute in a fry pan, 3 minutes or until shrimp are done. Remove from pan; keep warm.

Toss everything together in a bowl. Serve.

Arrange 2 cups lettuce mixture on each of 4 plates. Top each serving with 3 avocado wedges; divide shrimp and grapefruit sections evenly among servings.
