One-Bowl No-Mixer Cake: Banana Version, with Coconut and Chocolate Chips! by alchemisty

I adapted this from the Baking Illustrated recipe for Banana Bread into something a bit more cake-like. It's a great way to use those bananas you forgot to eat. And you can play around with the extra ingredients... get rid of the chocolate and add macadamias... get rid of the coconut and add dried raspberries, etc.

Ingredients

  • 2 C self-rising flour
  • 3/4 C sugar
  • 2-3 very ripe bananas
  • 1/4 C yogurt (it's fine to use a fruit-flavored yogurt if you're out of plain)
  • 2 large eggs
  • 6 T unsalted butter, melted and cooled
  • 1 t vanilla extract
  • 3/4 C chocolate chips
  • 3/4 C shredded coconut
9-inch round

Directions

1. Adjust an oven rack to the lower-middle position and preheat oven to 350ยบ. Butter pan and dust with flour; invert and tap to get rid of excess flour.

2. Whisk the flour and sugar together.

4. Mash the bananas. Mix in the yogurt, eggs, butter and vanilla with a wooden spoon in a medium bowl.

5. Lightly fold the dry mixture into the mashed mix. Add chocolate chips and coconut.

6. Scrape into the prepared pan. Bake until a toothpick comes out clean, 30-35 minutes.
