30-minute Mac and Cheese

30-minute Mac and Cheese by alchemisty

Super quick and easy.


  • 2 garlic cloves
  • 1 C veg stock
  • 1/2 C milk
  • 1.5 C chopped cauliflower
  • 1.5 C chopped broccoli
  • 5 oz uncooked elbow macaroni
  • 3 oz shredded sharp cheddar
  • 1/4 t salt
  • 1/4 t black pepper
4 servings


Saute the broccoli and cauliflower in some olive oil until lightly browned, then add a bit of water to finish the cooking process.

Saute the garlic in some olive oil in a large skillet. Add stock and milk and bring to a boil. Add dry pasta and simmer for 5 minutes or until mostly tender. Stir in cheese, salt and pepper. Then add the broccoli and cauliflower and let everything simmer together until everything tastes done.
