these muffins are great with fruit or chocolate chips, but also work well with savory additions like chives and cheddar.

Ingredients

  • 1/4 cup unsalted butter, melted
  • 4 tablespoons sugar
  • 2 eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 2/3 cup oat flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
12 muffins

Directions

melt the butter, pour it into a mixing bowl. whisk in sugar and oat flour. add eggs one at a time, whisking thoroughly between. add all-purpose flour, baking powder and salt, stir a bit, add milk and finish stirring until mixed (batter will be thick and slightly lumpy). pour into muffin cups or tins and bake for 15 minutes or so.
