this is a great topper for pizza, a spread for sandwiches and, of course, it's great with pasta.
- 2 cups arugula leaves slightly packed
- 1/4 cup extra virgin olive oil
- 1/4 cup shelled pistachios
- 1/2 cup grated parmesan
- 1 large clove of garlic peeled
- dash of red pepper flakes
Throw all the ingredients into a food processor and process until smooth. Adjust ingredients to taste.
