The Braised Soy Sauce Eggs with Green Tea is very popular in Taiwan. You can buy it in most of the convenient stores in Taiwan. It is perfect food for a busy Mom. You can cook whole bunch of eggs over the weekend for your entire family for the coming week. Kids like it because it tastes better than the plain boil eggs. You can cook more than 6 eggs each time depending on the size of your family. You can also add some other spices to your taste.
Note: (1) more eggs add more soy sauce, water, tea bag, etc... (2) Cook the egg in cold water allows the eggs to cook gradually. The egg shell will crack if you add them to a boiling water and cook. (3) Save the left over juice in the refrigerator & use it next time.

Ingredients

  • 6 eggs or more
  • 3/4 cup of soy sauce or more
  • 2 1/2 cup of water or more
  • 1 tea spoon of sugar or more
  • 5 clovers of garlic, smashed
  • 1 tea spoon of sliced ginger
  • 3 - 4 tea bags of green tea or more
  • Pepper

Directions

1. Put eggs in a small pot & fill with cold water
2. Bring the water to a strong rolling boil & continually cook for 1 min.
3. Remove the pot from heat & let rest for 3 minutes.
4. Drain hot water & sock eggs in cold water for 10-15 min, then peel the shell off
5. Mix soy sauce, water, sugar, garlic, tea bags & pepper in the pot, taste it & adjust to your taste
6. Put the peeled eggs to the mixture, make sure the sauce cover the eggs
7. Bring them to a boil, then turn the heat to low
8. Slow cook in low heat for 15 minutes, turn around the eggs to make sure all sides are soaked with the mixture while cooking
9. Pick up eggs and place them in a plate.
10. Cut in half or quarter & pour the sauce over it & enjoy your tasty eggs.
