Lemon Muffins

Simple Sunday morning muffins. The muffin tops were the best part. Next time, I may try to mix some of the Sugar in the Raw into the batter.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 3 t baking powder
  • zest from one lemon
  • juice from one lemon
  • 1/2 t salt
  • 1 cup milk
  • 1/3 c vegetable oil
  • 1 egg
  • 2 T sugar in the raw to sprinkle on top

Directions

1. Pre-heat oven to 400ยบ and line muffin tins with baking wrappers.
2. Combine flour, sugar, baking powder, lemon zest and salt.
3. In a separate bowl, combine milk, oil, egg and lemon juice.
4. Add liquid ingredients to dry ones and combine.
5. Full muffin cups about 2/3 of the way full and sprinkle Sugar in the Raw on top.
6. Bake for 15 minutes.
