Basic 4-Egg Meringue

I wanted to add a bit of zing to a pie so I opted to make a meringue, which, surprisingly, was fairly simple.

Ingredients

  • 4 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla*
  • 1/2 cup sugar
  • * The recipe also says you can substitute the vanilla with 1/4 teaspoon of lemon or orange extract.

Directions

Preheat oven to 375.

Combine the eggs, cream of tartar, and flavoring in a bowl and whisk until the egg whites are foamy.

Slowly add sugar, a tablespoon at a time, until it's dissolved.

Continue to whisk until the whites are stiff, glossy, and holds soft peaks.

Carefully spread over a hot or warm filled pie, sealing it completely to edges of the crust.

Bake for 12-15 minutes or until the meringue reaches the desired brown color.

Cool on wire rack away from drafts.
