Cola Cakes

Here's a recipe from the Coca-Cola Company, which I guess was originally submitted by Lee Avery Catts to "Atlanta Cooknotes" published by The Junior League of Atlanta.

What absolutely floored me was how chocolaty this cake was...and the frosting. Well, I saved the left over portion (only like a quarter cup) and served it with fresh strawberries the following day. Holy moley...it's soooo good.

Ingredients

  • BATTER
  • 2 cups sugar
  • 2 cups all-purpose flour
  • 1-1/2 cups small marshmallows
  • 1/2 cup butter
  • 1/2 cup vegetable oil
  • 3 Tablespoons cocoa
  • 1 cup Coca-Cola
  • 1 teaspoon baking soda
  • 1/2 cup buttermilk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • FROSTING
  • 1/2 cup butter
  • 3 Tablespoons cocoa
  • 6 Tablespoons Coca-Cola
  • 1 lb powdered sugar
  • 1 teaspoon vanilla
  • 1 cup chopped pecans (optional)

Directions

Preheat oven to 350.

Sift together sugar and flour.

Add marsh- mallows.

In saucepan, mix butter, oil, cocoa, and cola. Bring to a boil.

Pour over dry ingredients and mix.

Dissolve baking soda in buttermilk just before adding to batter.

Add eggs and vanilla extract.

Mix well and pour into a well-greased 9-by-13-inch pan or in a lined cupcake pan.

Bake 35 to 45 minutes.

While the cake(s) bake, it's time to make the frosting.

Combine butter, cocoa and cola in a saucepan and bring to a boil.

In another bowl, add powdered sugar. Add stove top mixture and blend well.

Add vanilla extract and, if desired, nuts.

Once cake(s) come out of the oven, immediately spread over hot cake.
