Very Cherry Berry Buckle

Another easy recipe that can probably be modified with whatever fruit you have in the freezer or on-hand.

Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt*
  • 1/4 cup softened butter
  • 3/4 cup sugar
  • 1 egg
  • 2 teaspoons lemon juice
  • 1 teaspoon lemon zest
  • 1/2 cup milk
  • 2 cups Trader Joe's Very Cherry Berry Blend or other fruit (thawed, if frozen)
  • CRUMBLE TOPPING
  • 1/3 cup sugar
  • 1/3 cup sifted flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 3 tablespoons butter, diced
  • *Use normal table salt, not coarse kosher salt.
  • You will also need a large bowl, a mixer, and a greased 9x9x2 baking dish.

Directions

Preheat the oven to 375ºF.

To create the batter, start by sifting together the flour, baking powder and salt in the large bowl.

In the mixer, cream butter, sugar, egg, lemon juice, and zest.

Alternate adding the dry ingredients and milk until just moistened.

Fold in fruit then pour into greased baking dish.

Next, add the dry topping ingredients into the bowl. Add butter and cut into dry ingredients with a pasty blender until it comes to cornmeal consistency.

Sprinkle over the surface of the batter.

Bake for 45 minutes until done. Test with toothpick. If comes out clean, you're good to go.
