St. Patrick's day is coming up and I also just happened to get a beautiful head of cabbage. So what better thing to do then make Corned Beef and cabbage.
I remember as a kid my mom would throw this together for my dad. So if mom could wing it...so can I.
- about 3 lb corned beef
- 1 head of cabbage, cut into small wedges
- 2 lb new potatoes*
- 5 carrots, peeled and cut into 3" pieces
- *I used Trader Joe's Potato Medley.
Place corned beef and packaged spices in a large pot. Cover the beef with an inch of water and bring to a boil. Then reduce heat and simmer, until the beef is fork tender (about 2-1/2 hours).
After 2 hours, add the vegetables. Cook until tender, about 30 minutes.
Cut against the grain 1/2" slices. Serve with boiled vegetables.
