Coconut Macaroons

The ABSOLUTE BEST macaroons I've ever had are from Porto's. They're crisp while still moist. When you take a bite you're overcome with a rich, sweet flavor.

Okay, so now you know what I'm aiming for. Am I there yet? No. :o( However, I think the honey in this recipe really helps bring a warm flavor to the mix. Plus, this recipe was super easy.

Ingredients

  • 2 egg whites
  • 1/2 cup honey
  • Pinch of salt
  • 2 cups shredded, unsweetened coconut
About 20 cookies

Directions

Preheat oven to 400

Whip egg whites to soft peaks.

Drizzle in honey while whisking.

Whisk in salt.

Stir in coconut until it's all coated.

Line a pan with parchment paper. Then roll tablespoons of dough into balls and place on pan.

Bake for 10-15 minutes, rotating every 5 minutes. Remove when golden brown.
