Dried-Cranberry Shortbread

Martha cuts these things into pretty little hearts but that seems like a potential waste of shortbread so I just cut them into squares. Plus, I use a food process to whip up the dough in a minute. If you don't have a food processor, you can also mix this by hand.

Ingredients

  • 1/2 cup dried cranberries
  • 1 cup butter, softened
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1/2 teaspoon salt
about a dozen servings

Directions

Preheat oven to 325ยบ.

Process the cranberries in the food processor for about 30 seconds.

Add remaining ingredients and run the processor just until the dough starts to come together.

Dump dough into a 8x13 pan* and kneed a little if you see unmixed parts of the dough.

Press dough evenly into the pan and then bake for 30 minutes, until a pale golden brown.

Remove from oven and cool on a rack for 20 minutes.

Then run a knife around the edges and slice into squares.

*The original recipe calls for an 8x8 pan but I use a larger pan because I think it cooks more evenly.
