Pfeffernüsse

I LOVE food that's fun to say. So come Christmas, "Pfeffernüsse" tops my list of fun foods that roll off my tongue and onto a plate. (Hmmm...well now it sounds like I have the eating habits of an owl. Oh well.)

This recipe came from Martha (Stewart, of course) and -- as one would expect -- looks perfect. My only critique is that for a spice cookie it lacks bite.

Well, this is just the start of the Christmas Cookie season so maybe -- just maybe -- we'll have another stab at...let's say it together now..."Pfeffernüsse"!

Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cup firmly packed light-brown sugar
  • 1/4 cup molasses
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 2 1/4 cups flour
  • 1/4 teaspoon pepper
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon baking soda
  • 1 1/4 cups powdered sugar
about 30 cookies

Directions

Preheat oven to 350º.

Line cookie sheets with parchment paper or silicone liner.

Beat butter, brown sugar, and molasses with mixer until fluffy.

Mix in egg and vanilla.

In a separate large bowl mix flour, pepper, cinnamon, allspice, nutmeg, cloves and baking soda.

Add flour mixture to mix little by little until just incorporated.

Take tablespoons of the dough and roll into balls.

Place balls on the baking sheets about an inch apart.

Bake for about 15 minutes until the cookies are firm to the touch and slightly cracked.

Cool on sheets for about 10 minutes.

Place powdered sugar in a bag or lidded plastic container.

Place a cookie or two at a time in the sugar and shake to coat.

Place on wire rack to cool completely.
