Orange Cookies

There's something about using a food processor in a kitchen that makes you feel like a ninja. (It's probably the blade that looks like a throwing star.) Here's an icebox cookie that quickly comes together in a food processor (but if you don't have one, you can always use a pastry knife to cut the butter into the dry ingredients).

The nice thing about icebox cookies is that you can make the dough in advance and keep it in your fridge for a week or two (or longer in the freezer) until you actually want to bake them.

Also, this is a yummy sweet treat for those vegetarian friends who don't eat eggs.

Ingredients

  • DRY INGREDIENTS
  • 2 cups flour
  • 1 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup butter, room temp
  • 1/4 cup milk
  • 2 teaspoons orange zest
  • 2 teaspoons vanilla extract
about 8 dozen

Directions

Add dry ingredients to food processor and mix for 10 seconds.

Add butter and mix until you reach a cornmeal texture.

Add remaining ingredients until it just comes together.

Remove from food processor and form a ball.

Roll ball into a tube (or rectangular bar if you prefer square cookies) and wrap in plastic wrap.

Refrigerate for at least an hour until firm.

Preheat oven to 375ยบ.

Remove plastic wrap and cut 1/8'' slices.

Place slices onto an ungreased cookie sheet and bake for 7-9 minutes (or until golden brown).

Remove from sheet and cool on a rack.
