Mashed Red Potatoes

This goes great with Grilled Chimichurri Tri-tip.

Ingredients

  • 2 lb Red Potatoes (about 7)
  • 1/3 to 1/2 cup of half and half
  • 1/4 cup butter
  • 1/2 teaspoon salt
  • pepper to taste
4-5 servings

Directions

Boil potatoes until they're fork tender -- about 20 to 25 minutes.

Slice each potato into quarters and place in a large bowl.

Mash potatoes until they're just about the desired texture.

Add remaining ingredients and mash until all ingredients are incorporated.

35 minutes

    OMG I spent like 15 minutes looking for mashed red potatoes on Cook's Illustrated. Apparently that is not allowed. I now look forward to making yours!
