Butter Pie

How can I resist a recipe for something called "Butter Pie"?!

Actually, after my first slice, I think a better name for this is "Sugar Pie". Holy Molé, is this sweet or what? This pie definitely needs to be served with a scoop of vanilla and a strong cup of coffee. Oh yeah, and keep the slices for the kids small for your own sanity's sake.

As you can see from above, this pie oozes so probably not something to take to a pot luck.

Ingredients

  • A Pre-baked Pie Shell
  • 6 Tablespoons butter, unsalted & softened
  • 1 lb brown sugar*
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 eggs
  • Vanilla Ice Cream for serving
  • *The original recipe called for 2 cups but I found that to be almost a pound. I also used dark brown sugar instead of light because that's what I hand on hand.

Directions

Preheat oven to 350º.

Cream soften butter and sugar.

Mix in salt and vanilla.

Add eggs one at a time.

Continue to mix for a minute until cream and light.

Spread into the pie shell.

Bake for about 30 minutes until the top is dry and browned.

Cool for at least an hour then refrigerate for at least another hour or overnight.

Servie with vanilla ice cream.
