I found this recipe in one of my vintage cookvooks -- 1964's "The Complete Western Cookbook" by Betty Johnson. How can anyone not like something called a "Lemon Wonder Pie"?
- pie pastry for a single crust pie
- 1/4 cup butter, softened
- 3/4 cup sugar
- 1/8 teaspoon salt
- 1 teaspoon lemon zest, grated
- 3 eggs, separated
- 3 Tablespoons flour
- 6 Tablespoons lemon juice
- 1/2 cup milk
Preheat oven to 350°.
Cream butter, sugar, salt, and zest.
Beat in yolks followed by the four and juice.
Slowly mix in the milk.
Whip egg whites into stiff peaks then fold into filling.
Roll out pie dough then line a pie tin. Finish edges then fill.
Bake for 40-50 minutes.
