Artichoke Dip

This is a warm and cheesy artichoke dip that's great for parties and usually disappears quickly.. Goes great with pita chips!

Ingredients

  • 1 can artichoke hearts packed in water
  • 1-2 tbsp mayo
  • 1 cup grated parmesan cheese
  • 1-2 cloves garlic, crushed
  • 2 tbsp freshly squeezed lemon juice
  • 1/2 tsp salt
  • 1/2 cup chopped frozen spinach (optional)

Directions

Preheat oven to 400°.

Drain and roughly chop or smash the artichoke hearts. Thaw spinach if using and squeeze out any extra water. Mix the artichoke and spinach with the rest of the ingredients, adjusting the amount of mayo for desired creaminess.

Transfer to an ovenproof dish and bake for about 30 minutes or until the dip starts to bubble and is heated all the way through. Let cool for about 15 minutes before serving.
