Italian Deli Fried Rice

I didn't want to waste the expensive Italian meats I bought at the deli so I used them in fried rice. The most glorified yang chow fried rice dish you've ever seen.

Ingredients

  • 4 slices proscuitto, diced
  • 3 slices hard salami, diced
  • 2 slices mortadella, diced
  • 2 cups day old rice
  • 2 stalks green onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp oil
  • 1 egg

Directions

Heat 2 tbsp cooking oil over medium high heat. Add meat and saute til crisp. Add garlic and saute a few minutes. Add rice. When rice is broken up add the green onion and remove from heat. No need to add salt, the meat is salty enough.

Top with a sunny-side egg.
